Tweens:

(NC)-What your tween brings for lunch can be as much a social statement as it is a meal. Help them become lunchroom cool with Slammin' Sushi Rolls featuring fresh cucumber, green beans and mango. Have them pick an accompaniment that suits their taste like tangy pickled ginger or hot wasabi paste.
1/2 cup cooked short grain rice (brown or white) 125 mL
1 tbsp seasoned rice vinegar 15 mL
2 tsp toasted sesame seeds 10 mL
2 sheets nori (roasted seaweed) 2
2 long slices Southern U.S. cucumber (about 8-inches/20 cm) 2
4 thin slices Southern U.S. mango 4
4 blanched Southern U.S. green beans 4
4 thin slices red bell pepper 4
In bowl, using rice paddle or fork, stir together cooked rice, rice vinegar and sesame seeds. Set aside.
Arrange one sheet of nori on a bamboo sushi mat or a piece of parchment. Spread half of the rice mixture in a 1-inch (2.5 cm) strip along the bottom edge of the nori. (Using wet fingertips make this much easier.) Arrange half of the cucumber, mango, green beans and red pepper lengthwise, on top of the rice. Using the mat or parchment as a guide, roll up nori to surround rice and vegetables to make a long thin tube.
Using a very sharp, wet knife (wetting the knife in between cuts will prevent the nori from tearing), cut each roll into 6 pieces. Repeat with remaining ingredients to make another roll.
Serve with teriyaki sauce, wasabi and pickled ginger if desired.
Makes 12 pieces or 2 servings.
