Pu-erh tea is unfamiliar to many people. But, it’s an ancient tea that the Chinese have been drinking for centuries. Pu-erh tea is named for the region in China where it is grown. It is a black tea - but with a twist. Pu-erh is fully fermented like black tea, but then it is aged. Unlike regular black tea, pu-ehr is not designed to be consumed when fresh, but after it has gone through this aging period.

The full fermentation that pu-erh goes through gives it a very distinct, earthy flavor. Like fine wine, pu-erh is believed to get better with each passing year. In fact, pu-erh connoisseurs classify this tea by its age. Pu-erh is also made from a different type of tea tree. The tea tree used to create pu-erh is grown only in the Yunnan province of China.

The leaves are covered with a fine white hair and the chemical composition of the leaves is different. And, unlike other teas, first flush pu-erh is not considered the finest harvest of the tea. Larger leaves from later harvests are considered the best. The leaves are moderately fermented and then dried during processing.

Then, they are sometimes formed into cakes before being stored outside. Exposure to the heat and air is part of the maturing process of pu-erh. Later, the tea is moved underground where it ferments for several years. When brewed, the tea is red in color and has a very mellow flavor.

Pu-erh is very prized in China. The oldest trees in the Yunnan Province are thought to produce the very best pu-erh, which is held in high esteem for medicinal purposes. It is often served with Dim sum meals, because it is believed to aid digestion. It has a very earthy flavor, and an aroma reminiscent of mushrooms.

Pu-erh is known for helping reduce fat in the body, and for lowering cholesterol. Many studies have been performed on this tea, and have shown it to have many benefits in protecting our health. And, it’s delicious, too.

Pu-erh is somewhat difficult to find in the US. It is not nearly as popular here as in other countries, so many tea companies do not carry it.
